Chuck Wagon Dinner


1 pound ground beef
1/2 cup chopped onion
2 tablespoons butter or margarine
1 teaspoon salt
1/8 teaspoon pepper
2 cups cubed Cheddar cheese
2 cups medium noodles, uncooked
1 (16 ounce) can whole tomatoes
1/4 cup water

In frying pan melt butter and sauté onion. Add meat; sprinkle with salt and pepper. Brown slowly. Pour off excess fat. Add cheese to cover meat. Add noodles to cover cheese. Pour tomatoes and water over all. Cover, turn heat to low and simmer for 30 minutes. Do not uncover while cooking!.

Salisbury Steak With Onion Gravy

1 egg
1 can (10 1/2 oz.) condensed French onion soup, divided
1/2 cup dry bread crumbs
1/4 tsp. salt
pinch of pepper
1 1/2 lb. ground beef
1 Tbsp. all-purpose flour
1/4 cup water
1/4 cup ketchup
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
6 cups hot cooked egg noodles
chopped, fresh parsley (optional)

In a large bowl, beat the egg. Stir in 1/3 cup of the
condensed soup, bread crumbs, salt and pepper. Add the
beef. Mix gently. Shape into six oval patties.

Brown the patties in a skillet over medium heat for 3-4
minutes on each side. Remove and set aside. Discard the
drippings.

In the skillet, combine the flour and water until smooth.
Add the ketchup, Worcestershire sauce, mustard and remaining
soup. Bring to a boil. Cook and stir for 2 minutes. Return
patties to skillet. Cover and simmer for 15 minutes or until
meat is no longer pink.

Serve patties and gravy over noodles. Garnish with parsley,
if desired.

Beef & Mushroom Dijon

Prep Time: 10 min.
Cook Time: 25 min.

Vegetable cooking spray
6 oz. mushrooms, sliced (about 2 cups)
1 medium onion, chopped (about 1/2 cup)
3/4 lb. boneless beef sirloin steak, 3/4-inch thick, cut into strips*
1 can (10 3/4 ounces) Condensed Cream of Mushroom Soup
1/4 cup water
2 tbsp. Dijon-style mustard
4 cups hot cooked rice, cooked without salt
Chopped fresh parsley (optional)

Spray a 10-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the mushrooms and onion and cook until tender. Remove the vegetables and set aside. Remove the skillet from the heat.

Spray the skillet with the cooking spray. Add the beef and cook until it's well browned and the juices evaporate, stirring often.

Stir the soup, water, mustard and vegetables into the skillet and cook until the mixture is hot. Toss the rice with the parsley, if desired. Serve the beef with the rice.

*To make slicing easier, freeze beef for 1 hour.

Pan-Seared Steaks with Mushroom Gravy

Prep: 5 minutes
Cook: 25 minutes
Serves: 4

Ingredients:

1 pound boneless beef sirloin steak, cut into 4 pieces
1 tablespoon unsalted butter
2 cups sliced fresh mushrooms (about 6 ounces)
1 tablespoon all-purpose flour
1 cup Beef Stock

Directions:

Season the steaks as desired. Cook the steaks in a 12-inch nonstick skillet over medium-high heat to desired doneness. Remove the steaks from the skillet. Do not pour off any fat.

Heat the butter in the skillet. Add the mushrooms and cook until they're tender. Stir in the flour and cook for 1 minute. Gradually stir in the stock. Cook and stir until the mixture boils and thickens. Serve the mushroom gravy with the steaks.

Beef Bourguignonne

Ingredients:
1 can (10 3/4 ounces) Condensed Golden Mushroom Soup
1 cup Burgundy or other dry red wine
2 cloves garlic, minced
1 tsp. dried thyme leaves, crushed
2 cups small whole mushrooms (about 6 ounces)
2 cups fresh or thawed frozen whole baby carrots
1 cup frozen small whole onion, thawed
1 1/2 lb. beef top round steaks, 1 1/2-inches thick, cut into 1-inch pieces

Stir the soup, wine, garlic, thyme, mushrooms, carrots, onions and beef in a 3 1/2-quart slow cooker.

Cover and cook on LOW for 8 to 9 hours* or until the beef is fork-tender.

* Or on HIGH for 4 to 5 hours

Serves 6.

Steak & Mushroom Florentine

Prep Time: 5 min.
Cook Time: 20 min.

Ingredients:
2 tbsp. vegetable oil
1 lb. beef sirloin steak OR beef top round steak, 3/4-inch thick, cut into thin strips
1 small onion, sliced (about 1/4 cup)
4 cups fresh baby spinach leaves
1 can (10 3/4 ounces) Cream of Mushroom Soup
1 cup water
1 large tomato, thickly sliced
Freshly ground black pepper


Directions:
Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat. Add the beef and cook until it's well browned, stirring often. Remove the beef from the skillet. Pour off any fat.

Reduce the heat to medium. Add the remaining oil to the skillet. Add the onion and cook until it's tender-crisp. Add the spinach and cook until the spinach is wilted.

Stir the soup and water in the skillet and heat to a boil. Return the beef to the skillet. Reduce the heat to low. Cook until the mixture is hot and bubbling. Serve the beef mixture over the tomato. Season with the black pepper.

Easy Beef Enchiladas

Prep Time: 20 min.
Bake Time: 20 min.


1 lb. ground beef
1 pkg. (about 1 ounce) taco seasoning mix or burrito seasoning mix
1 can (about 16 ounces) refried beans
1 can (10 3/4 ounces) Condensed Cheddar Cheese Soup
1 medium onion, chopped (about 1/2 cup)
1 cup cooked regular long-grain white rice (optional)
12 flour tortillas (10-inch), warmed
1 1/2 cups prepared enchilada sauce
shredded Cheddar cheese

Heat the oven to 350°F. Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir the seasoning mix, beans, soup, onion and rice, if desired, in the skillet.

Divide the beef mixture among the tortillas. Roll up the tortillas and place seam-side down into a 3-quart shallow baking dish. Pour the enchilada sauce over the filled tortillas and sprinkle with the cheese.

Bake for 20 minutes or until the enchiladas are hot and bubbling.

Serves 6.

Tip:
For make-ahead ease, roll the enchiladas, then refrigerate in the baking dish. When you're ready to cook, simply top with enchilada sauce and cheese, then bake.

1 pound ground beef

1/2 cup water
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 cups frozen hash-brown potatoes
3 slices process American cheese

1. Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat.

2. Stir the soup, water, ketchup and Worcestershire in the skillet and heat to a boil. Stir in the potatoes. Reduce the heat to low. Cover and cook for 10 minutes or until the potatoes are tender. Top with the cheese.
Makes: 4 servings (about 1 cup each).

Hamburger Pie

1 1/2 pounds ground beef
1 can (10 3/4 ounces) Cream of Mushroom Soup
2 packages (8 ounces each) refrigerated crescent rolls
Your favorite shredded cheese

1. Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir the soup in the skillet.

2. Unroll 1 package crescent roll dough and press on the bottom and up the sides of a 9-inch pie plate. Press the seams to seal. Layer half the beef mixture and half the cheese in the pie plate. Repeat the layers. Unroll the remaining dough. Place the dough over the filling and press the edges to seal, if desired.

3. Bake at 350°F. for 15 minutes or until the crust is golden brown.

Makes: 6 servings.
