MY FAMOUS BROCCOLI CASSEROLE
Super easy and always a hit!

1 16oz. Bag Frozen Broccoli (thawed)
1 cup Rice (before cooking)
1 can Cream of Celery (or Mushroom) Soup
1/2 cup Milk
1 3oz. - 4 oz. can of Mushrooms
8 slices of American Cheese

Cook rice according to directions. Mix rice, broccoli, soup, milk and mushrooms together. Pour half the mixture in the buttered casserole dish. Cover with 4 slices of cheese. Add remaining broccoli mixture and top off with cheese slices.
Bake at 350 degrees for about 45 minutes, until cheese is melted and slightly browned.

OR

Microwave on high for 12 to 15 minutes (cheese won’t brown this way).



I hardly ever make this one at home, but it's a standard for family gatherings. People get mad if I don't bring the broccoli casserole. :angry:

TUNA NOODLE CASSEROLE

extra wide egg noodles
2 cans Albacore tuna in water, drained
1 can Cream of Celery Soup
1/3 cup mayonnaise
1 cup milk
8 oz. Velveeta cheese
4 oz. jar of chopped pimientos, drained
2 ribs of celery, diced
1 small onion, diced
lemon zest
1/2 cup sliced almonds

Preheat oven to 350°F.

Boil egg noodles according to package directions; drain.

In a pot, stir together all ingredients except for the almonds until well combined and the cheese has melted.

Stir in egg noodles until sauce is evenly distributed. Pour into casserole dish and sprinkle top with sliced almonds.

Bake for 30 to 40 minutes until almonds are golden

Beef Stroganoff Casserole

1 (12 ounce) package wide egg noodles
2 pounds round or sirloin steak, cut into 1-inch strips
1/2 cup flour, in zip-style bag
1 (16 ounce) package mushrooms, coarsely chopped
2 tablespoons finely chopped onion
1/2 teaspoon ground nutmeg
1/2 teaspoon dried parsley flakes
1 tablespoon paprika
1 (13 3/4 ounce) can beef broth
1 (8 ounce) container sour cream

Heat oven to 325 degrees F.

Place uncooked noodles in a 2 1/2-quart casserole.

Coat strips of steak with flour by putting a few strips at a time in zip-style bag and shaking well. Arrange coated meat on top of noodles.

Arrange chopped mushrooms evenly over meat. Then sprinkle the onion, nutmeg, parsley, and paprika on top of mushrooms.

Pour beef broth over entire dish.

Cover and bake for 1 hour; stir in sour cream and bake for an additional 15 minutes.

Chicken Stuffing Casserole

* 1 Pkg. Chicken Stuffing Mix
* 1 Can Cream Of Mushroom Soup(undiluted)
* 1/2 Cup Milk
* 2 Cups Cubed Cooked Chicken
* 1 Cup Corn Niblits
* 1 Can Mushroom Stems & Pieces(drained)
* 2 Cups Shredded Cheddar Cheese(optional)

Prepare stuffing mix according to package directions. Meanwhile combine soup and milk in a bowl and set aside.
Spread the stuffing into a greased 8" square baking dish.
Layer with chicken, corn, mushrooms, soup mixture and cheese(if desired)
Cover and bake 350 for 30-35 minutes until bubbly

Creamy Pesto Chicken & Bow Ties

Ingredients:
3 cups uncooked bow tie pasta
2 tbsp. butter or margarine
1 lb. skinless, boneless chicken breast, cubed
1 can (10 3/4 oz.) Cream of Chicken Soup (Regular or 98% Fat Free)
1/2 cup pesto sauce
1/2 cup milk


Directions:
Cook pasta according to pkg. directions. Drain.

Meanwhile, heat butter in skillet. Add chicken and cook until browned, stirring often.

Add soup, pesto sauce and milk. Bring to a boil. Cook over low heat 5 min. or until done. Stir in drained pasta and heat through.

Serves 4.
