~Pork Dishes~

Smothered Pork Chops

* 2 tablespoons cornstarch
* 1 3/4 cups Beef Broth
* 1/8 teaspoon ground black pepper
* vegetable cooking spray
* 6 bone-in pork chops, 1/2-inch thick
* 1 medium onion, sliced

1. Mix cornstarch, broth and black pepper until smooth. Set aside.
2. Spray skillet with cooking spray and heat over medium-high heat 1 min. Cook chops 10 min. or until browned. Set chops aside. Remove skillet from heat.
3. Spray skillet with cooking spray. Add onion. Cook over medium heat until crisp-tender.
4. Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Return chops to skillet. Cover and cook over low heat 5 min. or until chops are done.

yield: 6 servings

2-Step Garlic Pork Chops

Ingredients:
1 tbsp. vegetable oil
4 boneless pork chops, 3/4-inch thick (about 1 pound)
1 clove garlic, minced
1 can (10 3/4 oz.) Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 cup milk
4 cups hot cooked couscous or regular long-grain white rice


Directions:
Heat the oil in a 10-inch skillet over medium-high heat. Add the chops and garlic and cook for 10 minutes or until the chops are well browned on both sides. Remove the chops and set aside.

Stir the soup and milk into the skillet. Heat to a boil. Return the chops to the skillet and reduce the heat to low. Cover and cook for 5 minutes or until the chops are slightly pink in the center*. Serve with couscous or rice.

Serves 4.

Polynesian Pork Chops

Prep: 10 minutes
Cook: 25 minutes
Serves: 4

Ingredients:

4 boneless pork chops, 3/4-inch thick (about 1 pound)
1 teaspoon garlic powder
1 tablespoon vegetable oil
1 medium onion, chopped (about 1/2 cup)
1 can (10 3/4 ounces)Golden Mushroom Soup
1/4 cup water
1 can (8 ounces) pineapple chunks, undrained
3 tablespoon soy sauce
1 tablespoon honey
2 cups hot cooked regular long-grain white rice
Sliced green onion

Directions:

Season the pork with the garlic powder.

Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until it's well browned on both sides.

Add the onion, soup, water, pineapple with juice, soy sauce and honey to the skillet and heat to a boil. Reduce the heat to low. Cook for 10 minutes or until the pork is cooked through. Serve the pork and sauce with the rice and sprinkle with the green onion.

This simple recipe is quick, easy and tastes just like Mom used to make.

Super Moist Pork Chops

Prep Time: 5 min.
Cook Time: 20 min.


1 tablespoon vegetable oil
4 bone-in pork chops, 1/2-inch thick (about 1 1/2 pounds)
1 can (10 3/4 ounces) mushroom soup
1/4 cup water

1. Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.

2. Stir the soup and water in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the pork is cooked through.

Makes: 4 servings.

Kitchen Clip
It might be tempting to buy boneless chops, but the bone adds flavor and helps keep the meat moist.

The 2-Step Garlic Pork Chops sounds really good. I'd use brown rice though, don't care much for white. And only one clove of garlic? :)

Cheddar Penne with Sausage & Peppers


Prep Time: 20 min.
Cook Time: 20 min.


1 tablespoon olive oil
1 pound sweet Italian pork sausage, cut into 1/2-inch slices
1 large green pepper, cut into 2-inch-long strips (about 2 cups)
1 large onion, sliced (about 1 cup)
3 cloves garlic, minced
1 can (10 3/4 ounces) Cheddar Cheese Soup
1/2 cup milk
2 cups penne pasta, cooked and drained

1. Heat the oil in a 10-inch skillet over medium-high heat. Add the sausage and cook until well browned, stirring occasionally. Remove the sausage from the skillet. Pour off any fat.

2. Add the pepper and onion to the skillet and cook until the vegetables are tender, stirring occasionally. Add the garlic and cook and stir for 1 minute. Stir in the soup and milk and heat to a boil. Return the sausage to the skillet. Reduce the heat to low. Cook until the sausage is cooked through, stirring occasionally.

3. Place the pasta into a large bowl. Add the sausage mixture and toss to coat.

Easy Substitution: You may substitute hot Italian sausage for the sweet Italian sausage in this recipe.
Makes: 6 servings (about 1 1/3 cups each).

Glorified Onion Pork Chops

Prep Time: 10 min.
Cook Time: 25 min.


1 tablespoon vegetable oil
6 bone-in pork chops, 1/2-inch thick (about 3 pounds)
1 medium onion, sliced (about 1/2 cup)
1 can (10 3/4 ounces) Cream of Celery Soup
1/2 cup water

1. Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.

2. Add the onion and cook until the onion is tender, stirring occasionally. Stir in the soup and water and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the pork is cooked through.
Makes: 6 servings.

Kitchen Clip
For well-browned chops, it's a good idea to sauté them in two batches rather than all at once. Crowding the skillet will cause the pork to steam and they won't get the deep color they should.
